And…here it is – Callie’s 498 Meeting Street Crab Dip:
We are overwhelmed by all of the response to our Today Show appearance. We hope that you all will make this crab dip and buy some Callie’s cheese biscuits to serve with it. From Hoda and Kathie Lee’s expressions, you know that it is a knockout combination.
In a Pinch Tip
While you are making this recipe, double or triple the recipe and make a few and freeze! They make a great party hors d’ouevres or a last minute hostess gift to take or serve
Callie’s 498 Meeting Street Crab
- 1 pound lump crabmeat, picked over all shells gone
- 4 tablespoons of butter
- 4 tablespoons of flour
- 2 cups of cream
- 1 teaspoon of dried mustard
- 1/2 teaspoon of cayenne
- 1/2 cup of chives
- 3 shallots minced + 1 tablespoon of butter
- 1 teaspoon of Worcestershire
- 5 tablespoons of dry Marsala or Sherry
- A very generous cup of grated cheddar cheese
- Salt and pepper
- Fresh breadcrumbs
Instructions
- Melt the butter
- Whisk in the flour and let cook until golden – add the mustard the cayenne and salt and pepper
- In a separate pan, melt the 1 tablespoon of butter and saute the shallots
- Slowly whisk in the warm cream on low heat and following add the sherry/marsala
- Remove from heat and add crabmeat
- Add minced shallot and 1 cup of the cheddar cheese, saving a 1/4 cup for the top
- Add the chives, saving a few for the top
- Put the mixture in a generously buttered casserole and top with breadcrumbs mixed with cheddar and chives
- Drizzle with butter on top and bake at 375 until golden brown and bubbling

Have tried the mating street crab-dip,chopped VA-ham/spread while accomindating your recipe for cheesy/scratch- [White Lilly flour] biscuits! “WOW” what a difference in the 3 states that I served them and the response had them at the door/”Mouthwatering”! Mucho Gracious for the tips.. Bake-on!!
