Just got back from a whirlwind trip to New York for the Martha Stewart Show. What an amazing opportunity to meet some of the country’s coolest women. We were part of “Martha’s Annual Dreamers into Doers Awards.” Check out Martha’s website for more info and to watch the show.
Life has definitely been in the fast lane. Having been away from my little ones for a few days we needed some serious family time. Saturday night, I had a few other families over to celebrate (and for a good cause – my daughter sold live lobsters for a school fundraiser). As guests trickled in with their crustaceans, I whipped up a quick and easy supper of vegetable gratin and French bread. Never underestimate the power of some good bread – even if it isn’t one of our biscuits!!
Children were a plenty, so I popped up some popcorn “old fashion style” on the stove with a pinch of sugar and salt while we waited for the water to boil. The menu was simple -keeping me out of the kitchen and having fun with my family and friends. Here’s the recipe to make vegetable gratin in a pinch!
You can use any veggies that you see fit, however here are the ones I chose…
Vegetable Gratin
- Zucchini, Squash, Cauliflower, Cherry Tomatoes
- 5 Cloves of Minced (fresh) Garlic
- Block Parmesan (grated by you—not the store)
- Kosher Salt
- Freshly Ground Black Pepper
- Olive Oil
- Panko Bread Crumbs
Instructions
- Chop/cut all veggies, for the tomatoes I cut in half and throw all in a big bowl. Add the fresh garlic and grated parm. (set aside some parm for the top of your casserole) toss all veggies garlic and cheese with olive oil and salt and pepper (this is a great way to get your children involved—with clean hands they love to mix for me!)
- Let sit until about an hour before you want to eat it. Transfer to a BUTTERED casserole dish and top with your own fresh breadcrumbs or panko. Then top with a few pads of butter…
- Heat for about 45 minutes in a 375 degree oven. You may need to add a piece of foil towards the end. You want the top really brown and crispy, but not burned. Within about 10 minutes of putting this in the oven, your entire house will smell AMAZING! ENJOY!
