
All anyone can talk about these days is the unbearable heat. With temperatures in the 100s all through the day, there is nothing like a cooling cocktail in the evening. We threw together this recipe for a strawberry lime cooler early in the summer as a way to beat the heat and now we simply can't get enough. Depending on the day, we may or may not include a little tequila here and there. My girls love the non-alcoholic version and quickly dubbed it their "juice cocktail."
Every summer my aunts, uncles, and cousins all congregate for the Rockville Regatta on Bohicket Creek in the small town of Rockville, SC - a scenic 30 or so minute drive from downtown Charleston. The regatta takes place at the Sea Island Yacht Club, the second oldest yacht club in the country, and this year was the 120th regatta. (It's also where I was married!) For a lot of the people, the regatta means one big party! For me, it's a family affair. It always signals that summer is coming to a close and my girls are headed back to school!
This year, the regatta couldn't have been steamier so we couldn't help but come prepared with our frosty beverage. We did all the prep work and portioned in ziploc bags enough of the ingredients for 2 blenders worth of cocktails. We found a converter for our blender and it too was loaded onboard the boat. We were mixing drinks with ease!
Strawberry Lime Cooler
Ingredients
- 1 cup tequila (or not) - also, rum and vodka can be substituted
- 2 tablespoons of sugar
- 2 limes for juicing
- 2 cups of strawberries, washed and stems removed
- plenty of ice
- Blend away!
