For any that know me, you know I am not a baker. You may find that funny, but baking I leave to the experts- experts like Callie! I love to cook but there is a science to baking that just isn’t me. For years my idea of having dessert was the Tollhouse break-and-bakes. Finally a couple of years ago someone introduced me to my favorite, and my one and only, made-from-scratch dessert. I call it “A Cup a Cobbler”. All you bakers out there, I am sure you are scoffing at the idea!

But for my fans who don’t like to be exact and love the art of cooking, here is a sure fire quick and easy dessert that you can’t mess up! In fact, I tested it today and let my 4 year old and 2 year old girls make it all by themselves, while I had my youngest on my hip taking photos! You be the judge, but this weekend at your Easter feast whether you are hosting dinner or visiting someone for dinner, this is the perfect thing to serve or take for your Easter dessert! Almost as yummy as Callie’s latest creation coming next month-her famous shortcakes. The thought of them makes me long for summer.

In a pinch tip – Make 2 or 3 cobblers at once. As you can see from the photos one of ours didn’t make it past 4 servings!!!

Ingredients

  • Pie dish (works better than a casserole dish because it’s shallow and it will crisp much better)
  • 2 cups of berries/fruit-any kind you like (today I used mixed frozen berries from Costco. Summertime I prefer a mix of blueberries and fresh peaches)
  • 1 cup of sugar
  • 1 cup of self-rising flour (you know I prefer White Lily!)
  • 1 cup of whole milk
  • 1 capful of vanilla
  • 1 stick of butter
  • 2 tablespoons of brown sugar
  • 2 dashes of ground cinnamon
  • 1 thin slice of lemon

Instructions

  1. Once you get the ingredients measured it will take you about 5 minutes or less to prepare. Set your oven to 350 degrees.
  2. Put the stick of butter in the pie dish and either put in the microwave to melt or in the warm oven. Remove when the butter is melted.
  3. In a bowl combine: sugar, milk, flour, vanilla, cinnamon, and 1 tablespoon of brown sugar
  4. Whisk together until combined (it will be slightly lumpy)
  5. Pour the batter into the melted buttered pie dish
  6. Pour the fruit into the pie dish, give a little shake to even out the berries
  7. Bake on 350 until golden brown (about 45 min-1hr)
  8. Remove from oven and sprinkle with remaining tablespoon of brown sugar and spritz with one slice of lemon just before serving
